Husband and I started a New Year's Day tradition for our family a few years ago-- we make cookies. Nothing fancy, just something fun to do. This year we made Preacher Cookies. Super easy, but surprisingly tasty.
- 1/2 cup (one stick) butter
- 2 cups white sugar
- 1/2 cup milk
- 4 tablespoons unsweetened cocoa powder
- 1/2 cup peanut butter
- 1/2 teaspoon vanilla extract
- 3 cups quick cooking oats
- Bring butter, sugar, milk and cocoa to boil. Let boil for exactly 1 minute and 30 seconds. Don't start the timer until it begins to boil.
- Remove from heat, stir in vanilla and peanut butter. Then stir in oats.
- Drop large tablespoons of mix onto wax paper laid on top of dish towels or
newspaper. Let cool on counter top, peel from paper and turn over to finish drying. - Store in closed container.
